"Simon Says...." is a game most kids are already familiar with - we're just playing it in a kayak.  This game is an exercise in listening skills more than technical skills.  Like many other games and outdoor activities, kayaking has a specific lingo, and because safety and communication are important, it's important that kids learn basic terminology and commit it to memory.  Not only will the kids learn parts of the boat and gear, but they'll also be expected to know and perform certain skills on command.
